This recipe revealed a new way to make sausage and peppers, a more healthy way really. I used regular pork sausage in this version, but you could always use chicken sausage as an even healthier substitute. The original recipe called for broccoli rabe, but we don't like it so I always sub in regular broccoli in it's place. Grilled veggies lend so much flavor to any meal and we weren't disappointed in this one either. I had some scallions in the fridge so I added them to the mix and it was amazing, here's how we made it...

Serves 6
ingredients
• 1 head broccoli, cut into large florets
• 2 Tbsp EVOO
• 1 red bell and 1 yellow bell pepper, quartered and seeded
• 3 large scallions
• 2 links hot Italian sausage
• 1 lb orecchiette pasta
• Grated Parmesan for serving
• 2 Tbsp EVOO

2. Meanwhile, cook the pasta according to the package instructions and reserve 1 cup of the cooking water before draining. Chop the peppers, onions and broccoli into bite size pieces. Slice the sausages in thin rounds. Toss the veggies and sausage with the cooked pasta, 1 tbsp EVOO, splash of pasta water and serve with Parmesan on top. Adjust seasonings with S&P if needed after it's all tossed together.
