Avocado & Egg Breakfast toasts + a side of bacon! |
I wanted to try something a little different for breakfast this morning than the same old scrambled eggs and bacon. It's the weekend and I had some extra time on my hands to put this together. The meal was inspired by a Rachael Ray recipe I found and you can find the original recipe here: Rachael Ray's Egg & Avocado Toasts.
Here's how I made this breakfast for two...
ingredients
• 1 ripe avocado, smashed
• salt & pepper, to taste
• Frank's hot sauce, to taste
• 3 eggs, scrambled
• 2 T milk
• 2 large slices whole grain bread, toasted
• 6 slices cooked bacon (click here for directions on how to prepare bacon)
directions
1. Mash up avocado in a bowl and season with salt & pepper, add a dash of hot sauce.
2. Whisk eggs and milk in a small bowl, set aside. Heat a medium non stick skillet to medium and spray with cooking spray. Once pan is warm, pour eggs in pan and cook, stirring until eggs are done.
3. Spread avocado on top of each piece of toasted bread and top with the eggs. Add another dash of hot sauce on each and freshly ground pepper. Serve with the bacon on the side.
I would say you could also top with cheese and/or salsa as well and maybe some fresh herbs such as cilantro.
